Given the summertime season, popsicles are an easy pick to beat the heat - they are very versatile and you can make them any way you like. This recipe brings the best of both worlds with a delicious cold treat that includes cake batter that nobody can resist.
These pops are easy to decorate and dress up with sprinkles, but you can try adding other toppings like chopped fruit, candy or chocolate, depending on your preference. Serve these up for a birthday party or get-together and they'll get eaten up in no time!
- 3 cups of vanilla ice cream
- 3/4 cup yellow cake mix
- 2 teaspoons vanilla extract
- 1 cup milk
- 1/2 cup sprinkles (I used jimmies, nonpareils may turn your ice cream tie dye)
Combine ice cream, cake mix, vanilla extract, and milk in a blender and blend on medium speed until thoroughly combined and smooth.
Add sprinkles to mixture.
Spoon mixture or pour into popsicle molds and freeze for at least 4 hours or overnight.
After 1 hour you can stick wood popsicles sticks in the molds if not using the holders that come with your popsicle molds.
When they are ready to serve, run lukewarm water over the molds for about 30 seconds to 1 minute. Let popsicles thaw for another minute or two before pulling from plastic molds.
