This is exactly what I want to eat, just about all the time. Leftover mashed potatoes are already amazing, but what if you turn them into the most yummy little muffins with cheese? That sounds amazing right?
Cheesy Leftover Mashed Potato Muffins are delicious, easy to make, and will re-purpose those leftovers into something new and exciting. Try it out and let us now what you think!
- 3 cups leftover mashed potatoes
- 1 large egg
- 1 cup shredded cheddar cheese, divided
- 3 tablespoons chopped fresh chives, divided
Preheat oven to 375 degrees and prepare a non-stick cooking pan with cooking spray.
In a large bowl, combine your mashed potatoes with the egg, adding in 3/4 cup cheddar cheese and 2 tablespoons of the chopped chives. Add salt and pepper to taste.
Use an ice cream scoop add put your potatoes into the muffin tin, packing them down into the cups.
Top the muffins with the the remaining cheese, and bake for 30 to 35 minutes or until golden brown.
Remove muffins from the tin, let cool for a few minutes and then sprinkle the rest of your chives on top.
