Chicken Taco Taquitos Will Make You Forget the Freezer Aisle In a Flash

Forget the freezer aisle and make your own Chicken Taco Taquitos at home - I guarantee these will be better than any you've had before! These are rolled up and packed with filling ingredients and tons of flavor.

With melty cheese through and through, you can't beat these zesty taquitos for an appetizer, or even dinnertime meal. These are even the perfect after school snack if you want to freeze a batch and reheat through as needed.

Ingredients:

  • 2 boneless skinless chicken breast halves, cut into small pieces
  • 2 tablespoons taco seasoning
  • 2 tablespoons olive oil
  • ½ cup frozen corn kernels
  • ½ cup refried beans
  • ½ cup salsa, store bought
  • 1 cup cheddar cheese
  • 2 tablespoons cilantro, chopped
  • 12 6 inch flour tortillas
  • ¼ cup butter, melted

Directions:

Preheat oven to 450 F degrees.

Heat the olive oil in a skillet. Season the chicken breasts with the taco seasoning. Add chicken to skillet and cook for about 5 minutes or until chicken is cooked through.

Add corn, refried beans, salsa and cheddar cheese to the skillet, stir and cook for 2 more minutes. Add cilantro and stir.

Grease a 9x13 baking dish with some of the melted butter. Lay a tortilla flat and top with a couple tablespoons of the chicken mixture.

Tightly roll up the tortilla and place it in the baking dish. Brush with melted butter. Repeat with remaining tortillas. You should have enough chicken for the 12 tortillas.

Bake for 15 minutes or until taquitos are crisp and golden brown. Serve with salsa on the side.
