Lava cake is one of those desserts that everyone loves - I mean, who can resist creamy chocolate oozing from a piece of chocolate cake? Well, when you love something, you have to replicate it.
This Mac & Cheese Lava Cake has the same concept as regular lava cake, but it's anything but regular. All you need to do is whip up a box of macaroni and cheese, stuff it, freeze it, bread it and fry! You'll be chowing down on ooey gooey oozing macaroni and cheese in no time!
- Cooked mac and cheese
- 3 slices bacon, crumbled
- 1/3 breadcrumbs, plus more for breading
- 1/3 cup milk
- Velveeta cheese cubes
- 2 or 3 eggs, beaten
Mix the mac and cheese, bacon, Parmesan, breadcrumbs and milk in a bowl. Stir well. Place the mixture in a greased muffin tin or ramekin.
Punch a hole in the center of the mound. Place Velveeta in the hole. Cover it with more mac and cheese mix and pack it in tight. Put in the freezer.
Once frozen, take your ball out of freezer and take it out of the bowl. Dip into a mixture of the beaten eggs and bread crumbs. Repeat so you have two coats.
Carefully place in oil at 350 degrees. Cook until nicely golden brown! Serve with your choice of condiment.
