Eggnog is usually thought of as seasonal treat that we only get to enjoy around the holidays… probably for the best since the store bought eggnog is yummy, but is often a little too thick and sweet - not to mention its occasionally suspicious ingredients list.
Homemade eggnog turns that all on its head. You can make it to taste with exactly the right mix of smooth creamy texture, spice, and sweetened to exactly your preference. Best of all, you can enjoy it year round!
- 4 egg yolks, from pasteurized eggs
- 1/3 cup of sugar
- 2 cups of whole milk
- 1 cup of heavy cream
- 1/2 teaspoon of pure vanilla extract
- 1 1/2 teaspoons of freshly grated nutmeg
In the bowl of a stand mixer, mix egg yolks on medium speed.
Slowly add sugar just until well combined. Eggs should be a light yellow color.
Turn mixer to low and add in milk, heavy cream, vanilla and nutmeg.
Chill and serve.
