Grilled cheese is one of the ultimate comfort foods.
Sad? Eat a grilled cheese. Happy? Celebrate with a grilled cheese. Angry? Take out your anger on a grilled cheese.
It's a classically delicious sandwich. Butter, cheese, bread. Ketchup if you're feeling a little wild.
But sometimes you hit that awkward point where your bread is basically burnt toast while your cheese is still rock solid. Do you keep frying? Throw it in the microwave? Bake it?
Answer: none of the above.
All you need to use is mayonnaise from now on and you basically can guarantee yourself a perfect grilled cheese every time.
Instead of butter, spread your bread with a light coat of mayo. It spreads more evenly and smoothly than butter so you don't rip the bread. Mayo also has a higher smoke point, which means it won't burn as easily. So feel free to add extra cheese in there to make it extra gooey!
People who have used the mayo trick SWEAR by it. And if you want even MORE crunch on your crust, use some freshly grated parmesan on there as well.
Moral of the story: grilled cheese is good but mayo grilled cheese is better!
