Gingerbread Chia Pudding Is Dessert for Breakfast

For breakfast on the go, chia pudding has become a staple for me. Those little chia seeds are packed with fiber, protein, and nutrients galore, so you know it's a great thing to eat during the most important meal of the day.

This Gingerbread Chia Pudding tastes like a dessert but is great for you. Throw the ingredients in a jar, stick it in the fridge overnight and bam! You've got a delicious breakfast that you can eat while you run out the door. Why not give this a try tomorrow morning? Your tummy and taste buds will be glad you did!

Ingredients:

For the pudding

  • 1/4 cup chia seeds
  • 3/4 cup unsweetened soy milk
  • 1 tablespoon maple syrup
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon cinnamon
  • Sprinkle of ground clove
  • Sprinkle of sea salt

For the toppings

  • 1 tablespoon raisins
  • 1 tablespoon chopped pecans

Add all the ingredients (except the toppings)  for the pudding to a mason jar and stir to combine.

Refrigerate at least six hours or overnight. Try to give the mixture an additional stir while it's setting.
