Quesadillas originated in Mexico, and are stuffed with cheese and other desired toppings, then grilled to perfection. This spin on the classic dish is called Ham and Cheese Breakfast Quesadillas, and - you guessed it - they're made for breakfast time!
You've got the cheese factor with this twist, but it tastes a little less tex-mex (unless you dip them in salsa!) and a little more diner breakfast with the egg and diced ham. These quesadillas are easy to customize with different meats or veggies like bacon or peppers.
- 8 flour tortillas
- 2 tablespoons oil
- 3 cups Cheddar cheese, shredded
- Cubed ham
- 1 cup green onions, thinly sliced
- 1 cup sour cream
- 1 cup salsa
- Sliced jalapeno, optional
- 2 scrambled eggs per quesadilla
Place a griddle or large frying pan over medium heat.
Spray one side of a flour tortilla lightly with cooking spray and place it oil-side-down on the griddle.
Spread even amounts of cheese, scrambled eggs, ham and green onions on the tortilla.
Cover with the other tortilla and spray the top with cooking spray.
When the bottom is golden brown (about 5 minutes), carefully flip the quesadilla and fry until the other side is golden brown (about 4 minutes).
Slice into wedges and serve.
