Holiday Stuffed Potatoes Are a Clever Way to Use up the Rest of a Big Meal!

Is there anything better than a stuffed baked potato? Maybe dinner during the holidays? Let's go ahead and merge these two favorites!

Everybody is here, stuffing, turkey, cranberry sauce and of course tons of gravy! This will sure be next day after christmas dinner tradition for years to come!

Ingredients:

  • Stuffing
  • 4 large russet potatoes
  • Turkey, shredded
  • 2 tablespoons butter
  • 1 tablespoon chives
  • Cranberry sauce
  • Gravy

Directions:

  1. Bake 4 russet potatoes, cool and then cut just a little off the side in order to scoop out the insides leaving just about ½ an inch of potato from the skin.
  2. Mash the potato insides with chives and butter; put back into the potatoes only filling them halfway.
  3. Now fill to the top with shredded turkey, spoon 2 tablespoons of gravy over turkey, place ½ cup of stuffing on top.
  4. Bake for 20 minutes at 375 degrees. Top with cranberry sauce and more gravy.
