Ingredients:

  • 1 1/2 cups rolled oats
  • 1 1/2 cups pecan halves
  • 1/2 cup pretzels
  • 8 whole medjool dates, pitted
  • 2/3 cup coconut oil, melted
  • a pinch of coarse sea salt
  • 1 cup thick caramel
  • 2 cups chocolate chips, melted
  • sea salt (optional, for topping)

Directions:

To make the crust, pour your rolled oats, pretzels, into a food processor until they are all in small pieces.

Add the dates, coconut oil and a pinch of sea salt into the mixture and blend.

Chill the mixture for 15 to 20 minutes. While it is in the fridge, prepare your chocolate in a double broiler, melting it until smooth.

Scoop your oat mixture into a muffin tin, pressing down so there is a small well in the middle of each.

Scoop your caramel into eat, filling up the well.
