Cook Your Cheesy Kielbasa With Rice & Broccoli All In One Pot!

When you want a fancy dinner but don't want to do a bunch of dishes, you should give this Cheesy Kielbasa With Rice & Brocsoli a try!

Everything cooks in one skillet so you aren't having to spend all kinds of time on cleanup! Not to mention, it's absolutely amazing! The cheesy kielbasa mixed in with yummy rice and broccoli is the perfect combination for your dinner. Give it a try tonight!

Ingredients:

  • 1/2 tablespoon olive oil
  • 1 Kielbasa sliced diagonally
  • 1 small onion, diced
  • 1 smell bell pepper, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cloves garclic, minced
  • 1 cup white rice
  • 2 cups chicken stock or broth
  • 2 cups broccoli florets, bite sized pieces
  • 2 cups shredded cheese, divided

Directions:

Heat olive oil in a skillet on medium-high heat. Add in the kielbasa and cook for about 3-4 minutes on each side.

Remove the kielbasa from the skillet with a slotted spoon so the liquid remains behind. Add in the onion and bell pepper, sauteing until the onion is translucent.

Add the rice and stir for about 1-2 minutes.

Pour in the chicken broth and bring it to a boil. Reduce the temperature to low and cover it. Cook for 15 minutes.

After 15 minutes, add in the broccoli but don't stir it in. Let it cook for 5-7 minutes.  

Stir in the kielbasa and 1 cup of shredded cheese.

Add the rest of the cheese on top, covering for another 2-3 minutes so the cheese melts.

Scoop and serve and enjoy the hearty and cheesy flavors!
