Yes please, sign me up! Pizza stuffed chicken is an amazingly simple idea that brings together your favorite flavors in the best way possible.
It's a super versatile dish that you can modify the ingredients depending on what you like. Serve it with pasta or salad for a more extravagant meal, or even on it's own it is pretty amazing!
- 4 boneless skinless chicken breasts, pounded thin
- 1 cup marinara sauce, divided in halves
- 2 tsp Italian seasoning
- 1/2 cup pepperoni, chopped
- 12 pepperoni, whole slices
- 3/4 cup mozzarella cheese, divided
- 1/4 cup Parmesan cheese, grated
Preheat your oven to 400 degrees.
In a bowl, mix together half of the marinara sauce with the Italian seasoning, chopped pepperoni, Parmesan cheese and 1/4 cup of your mozzarella cheese. Set aside.
Lay out your pounded chicken breasts out and spread about 1/3 of a cup of your marinara mixture onto the chicken.
Roll it up, using toothpicks to secure it.
Place the rolled chicken onto a 8x8 or 9x9 square baking dish.
Pour the remaining 1/2 cup of marinara sauce on top of the chicken and then sprinkle the rest of your mozzarella cheese over the entire dish. Sprinkle a few pepperonis on each chicken breast.
Cook for 50-60 minutes or until the chicken is cooked throughout.
