Guilt-Free Portobello Fries: The Healthy Alternative To Your Favorite Sidedish

Do you ever reach for the french fries but find yourself feeling terribly guilty? Sure, they taste like salty perfection, but what about those of us who are trying to stick to our diets?

These Portobello Fries are the best way to trick your brain into thinking you are having the greasy treat without feeling all the guilt!

Ingredients:

Portobello Fries:

  • 1/2 cup bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • Pinch crushed red pepper flakes
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon oregano
  • Salt and pepper to taste
  • 2 portobellos
  • 2 large eggs beaten

Basil Aioli:

  • 2 tablespoons olive oil
  • 1/4 cup packed basil leaves
  • 1/2 teaspoon lemon juice
  • 1 medium galic clove, pressed
  • pinch of salt
  • 1/2 cup mayonnaise

Directions:

Preheat oven to 425 and line a baking sheet with parchment paper.

Slice your Portobellos into 1/8" slices.

Add the breadcrumbs, Parmesan, garlic, red pepper flakes, oregano, and salt and pepper, and mix it together.

Beat together your eggs.

Dip the mushroom slices into the eggs and then into the breadcrumbs, coating thoroughly.

Line the mushrooms out on your baking sheet and cook for 10-15 minutes, flipping halfway through.

While they cook, add the ingredients for your aioli into your blender and mix until smooth.

Serve your Portobello Fries with the Basil Aioli on the side and enjoy!
