The only thing that makes steak better? Bacon! Adding bacon to the delicious meat adds so much flavor and makes it the perfect appetizer. These bacon wrapped filet bites will totally impress your guests this holiday season and with the added blue cheese and balsamic sauce you will feel like a five-star chef!

Ingredient:

  • 5 oz filet mignon medallion
  • 3 strips bacon, halved
  • 1 cup heavy cream
  • 3/4 cup Maderia wine
  • 1/3 blue cheese
  • 3 leaves fresh basil
  • 1 tbsp balsamic reduction
  • salt and pepper to taste

Directions:

Start by chopping your steak into bite size cubes. Try to keep them similar sizes so the cooking time will be the same.

Then, wrap each piece in uncooked bacon, using a toothpick to secure. You won't need an entire piece of bacon so cut them down so it fits around the filet (about half a slice per bite should work).

Season your filet bites with salt and pepper to taste, then sear them in a pan until bacon is golden but not crispy.

In a sauce pan, add you wine and let it simmer. Once it has achieved a syrup-like consistency, add the balsamic reduction to the mix, then pour the heavy cream in, letting it come to a boil, stirring as the mixture becomes creamy and thick.

Cover the filet bites with the sauce, and then crumble blue cheese on top. You can also drizzle some extra balsamic reduction if you want, then add chopped basil to garnish and you're done!
