Spaghetti Squash

  • 2 small spaghetti squash, cut in half and seeded
  • 1 tbsp oil
  • salt and pepper to taste

Filling

  • 1 pound Italian sausage, casings removed
  • 1 tbsp oil
  • 1 onion, diced
  • 2 red peppers, diced
  • 3 cloves garlic, chopped
  • 2 cups marinara sauce
  • salt and pepper to taste
  • 1 cup mozzarella, shredded

Directions:

Preheat oven to 400 degrees.  

Cut the spaghetti squash in half and scoop out the seeds.

Brush oil on the squash, then sprinkle salt and pepper to taste. Pplace in the oven until tender - usually about 30 minutes.
