- 1 1/2 pounds Yukon Gold potatoes (about 5 medium), peeled, cooked and cut into chunks
- 1/4 cup red wine vinegar
- 1/2 teaspoon sugar
- 1/2 small red onion, very thinly sliced
- 1/4 cup extra-virgin olive oil
- 2 tablespoons chopped fresh Italian parsley
Mix your red win vinegar in a small bowl with the sugar.
Add your potatoes to a large bowl and then drizzle the vinegar mix over top.
Toss until all the pieces are coated.
Add the onion, salt and pepper and toss again.
Let it cool until it reaches room temperature, then add the olive oil and parsley.
Toss together and let marinate for 20 minutes.
Serve at your next dinner and enjoy!
