Taco Tot Casserole

Casseroles are a staple in our household, as are tater tots. So when I discovered this delicious recipe that combines my favorite breakfast fare with delicious Mexican-food inspired flavors, I knew I had to try it!

Don't let the longer list of ingredients fool you, this recipe is super simple to prepare and takes about an hour to make from kitchen to table.

1 pound ground beef

1 small onion, diced

1 clove garlic, minced

1/2 cup green bell pepper, chopped

1/2 cup red bell pepper, chopped

1/2 cup lettuce, shredded

1/2 cup tomatoes, diced

1 (1 ounce) packet taco seasoning mix

1 (16 ounce) bag frozen Mexican-style corn

1 (12 ounce) can black beans, rinsed and drained

1 (12 ounce) bag shredded Mexican cheese blend

1(16 ounce) bag frozen tater tots

1 (12 fluid ounce) can enchilada sauce


  1. Preheat oven to 375 degrees F (190 degrees C)
  2. Spray a 9 X 13-inch baking dish with cooking spray
  3. In a skillet, over medium heat, cook ground beef until fully browned
  4. Add onion, garlic, taco seasoning mix, frozen corn, black beans and cook for 10 minutes
  5. Allow the beef mixture to cool slightly
  6. In a large bowl, combine beef mixture with 3/4 cheeze blend and tater tots
  7. Pour 1/3 enchilada sauce into the bottom of a the baking dish, add tater tot mixture to the dish, pat down
  8. Pour the remaining enchilada sauce over the tater tots
  9. Bake for about 40 minutes, top with remaining cheese and broil for 5 minutes more until cheese bubbles
  10. Remove from oven and top with lettuce and tomatoes
