You Won't Miss the Meat with These Cilantro Lime Black Bean Burgers

Burgers are a staple in my household, but sometimes they can get a bit heavy to eat on a regular basis. These Cilantro Lime Black Bean Burgers are great because they're packed with fiber and are hefty on flavor.

These beauties are meat-free, but you'd never notice - they're just as delicious as a meaty burger! We used a Zwilling Twin Pure Silicone Slotted Turner to get the job done once we pulled out our pan - this tool ensures a solid flip without scratching your pans. Can't get much better than this!

Ingredients:

  • 2 cans black beans or 4 cups black beans
  • 1 jalapeno, seeds removed
  • 1/4 red onion
  • 1/2 cup corn
  • 2 garlic cloves
  • 1/3 cup cilantro
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon red pepper flakes
  • Juice of 1/2 lime
  • 1/2 cup bread crumbs
  • 1 egg
  • Salt and freshly ground pepper to taste

Directions:

In a food processor, process the jalapeno, onion, and garlic until finely ground.

Add in one can or two cups of black beans, cilantro, lime juice and spices. Process until a smooth, pasty consistency.

Transfer the mixture to a medium sized mixing bowl. Add in the rest of the black beans, egg, bread crumbs, and corn and stir until combined.

Form into burger sized patties.

Cook over medium heat for about 4 minutes on each side, or until browned nicely on each side.
