Energy bites are a popular snack in my household - we just love mixing up different flavor combos, rolling them up and taking them on the go for those moments when a pick-me-up is needed.

We made four different versions of No Bake Energy Bites - Dark Chocolate Mocha, S’mores, Trail Mix, and Blueberry Almond. Give these a try to figure out your favorite, and feel free to experiment with different fillings! You’ll love these for a quick and easy energy boost any time of day!

Ingredients:

For the Dark Chocolate Mocha Energy Bites

  • 1 tablespoon coconut oil, melted
  • ⅓ cup almond butter
  • ¼ cup honey
  • ½ cup + 1 tablespoon old fashioned oats
  • 2 tablespoons chia seeds
  • ¼ cup ground flax
  • 1 tablespoon espresso powder
  • 2 tablespoons dark chocolate chips

For the S’mores Energy Bites

  • 1 tablespoon coconut oil, melted
  • ⅓ cup peanut butter
  • ¼ cup maple syrup
  • ½ cup + 1 tablespoon old fashioned oats
  • 2 tablespoons chia seeds
  • ¼ cup ground flax
  • ¼ teaspoon ground cinnamon
  • ¼ cup graham cracker crumbs
  • ¼ cup chocolate chips
  • ¼ cup mini marshmallows

For the Trail Mix Energy Bites

  • 1 tablespoon coconut oil, melted
  • ⅓ cup almond butter
  • ¼ cup honey
  • ½ cup old fashioned oats
  • 2 tablespoons chia seeds
  • ¼ cup ground flax
  • ¼ cup shredded coconut
  • ¼ cup mini M&M's
  • ¼ cup pepitas
  • ¼ cup sunflower seeds

For the Blueberry Almond Energy Bites

  • 1 tablespoon coconut oil, melted
  • ⅓ cup almond butter
  • ¼ cup honey
  • ½ cup old fashioned oats + 1 tablespoon
  • 2 tablespoons chia seeds
  • ¼ cup ground flax
  • ¼ cup dried blueberries
  • ¼ cup sliced almonds

Directions:

For the Dark Chocolate Mocha Energy Bites:

  1. Add melted coconut oil, almond butter and honey to a large bowl, and mix until smooth.
  2. Stir in the oats, chia seeds, ground flax, espresso powder and chocolate chips.
  3. Roll into 1 tablespoon balls.
  4. Store in the fridge for up to a week or the freezer for up to 3 months.

For the S’mores Energy Bites:

  1. Add melted coconut oil, almond butter and maple syrup to a large bowl, and mix until smooth.
  2. Stir in the oats, chia seeds, ground flax, cinnamon, graham cracker crumbs, chocolate chips and mini marshmallows
  3. Roll into 1 tablespoon balls.
  4. Store in the fridge for up to a week or the freezer for up to 3 months.

For the Trail Mix Energy Bites:

  1. Add melted coconut oil, almond butter and honey to a large bowl, and mix until smooth.
  2. Stir in the oats, chia seeds, ground flax, shredded coconut, mini M&M's, pepitas and sunflower seeds.
  3. Roll in 1 tablespoon sized balls.
  4. Store in the fridge for up to a week or the freezer for up to 3 months.

For the Blueberry Almond Energy Bites:

  1. Add melted coconut oil, almond butter and honey to a large bowl, and mix until smooth.
  2. Stir in the oats, chia seeds, ground flax, dried blueberries and sliced almonds.
  3. Roll into 1 tablespoon balls.
  4. Store in the fridge for up to a week or the freezer for up to 3 months.
