Have a cupcake...if you dare! These Zombie Brain Cupcakes are more cute than scary...and totally delicious! Whip these up for your next Halloween or zombie party and they'll be devoured in no time.
If Halloween isn't your thing, but you're a Walking Dead fan, these are the perfect spooky sweet treats to make before binge watching the show. The pink frosting can be tinted using red food coloring or beets (either one works). If you're a fan of food and all things creepy, then these are the cupcakes for you!
For the cupcakes
- 1 box White cake mix (plus ingredients required as per box)
- Black and red gel food coloring
For the icing
- 4 ounces cream cheese, softened
- 1/8 cup unsalted butter, softened
- 3/4 teaspoon vanilla
- 2-4 cups powdered sugar
- Red food coloring
For the cupcakes, mix the batter according to box directions.
Add a small amount of black gel food coloring to the cupcake batter, and a slightly larger amount of red gel food coloring. Mix until your cupcakes are the desired dark red/pink color.
Scoop batter into cupcake liners in a muffin tin until about 2/3 full. Bake according to box instructions.
For the icing, cream together cream cheese, butter and vanilla until there are no more lumps.
Add a couple of drops of red food coloring to the cream cheese mixture until it is the desired shade of pink (for the brains).
Mix in the powdered sugar one cup at a time until you have a stiff icing (we used 3 cups).
Use an off-set spatula to icing the tops of the cupcakes, let sit for about 5 minutes to set.
Using a piping bag, pipe the remainder of the icing on the tops of the cupcakes into a "brain" design.
