When a friend of mine first mentioned zucchini brownies to me, I was baffled. My first thought was "why on earth should a vegetable like zucchini be used in anything other than zucchini bread?”
Brownies are glorious all on their own so why add a vegetable? Well, after I tried those brownies, my taste buds converted and I am now officially a fan! No seriously, they tasted unexpectedly amazing and there was no way of telling that a vegetable had been added to the mix.
