Easy Desserts You Can Make Using Cake Mix

It's time to think outside the cake mix box and make delicious desserts without all the work, because who has time to spend all day baking?

Cake mix is a pantry staple you never knew you needed. It's great for more than just quick and easy birthday cakes and will cut your prep time practically in half!

Here are two delicious desserts you would never guess are made using white cake mix. Give them a try and let us know what you think!

Lemon Cake with Raspberry Sauce

Ingredients

  • 1 box white cake mix
  • 3/4 cup sour cream
  • 1/2 cup butter, melted
  • 1/4 cup lemon juice
  • 2 eggs
  • 2 cups fresh raspberries
  • 1/3 cup sugar
  • 1/4 cup water
  • Vanilla frosting

Directions

  1. Preheat the oven to 350 degrees and grease a 13 x 9 glass baking dish.
  2. Beat the cake mix, sour cream, butter, lemon juice and eggs in a large bowl.
  3. Pour the mixture into the baking dish and bake for 26-30 minutes.
  4. Add the raspberries and water to a pot over medium high heat and bring to a boil. Add the sugar, stir and let boil for about 1 min.
  5. When the cake has cooled it's ready to serve. Top each slice with the raspberry sauce and vanilla frosting (pop the frosting in the microwave for 10-15 seconds to thin it out) and garnish with fresh raspberries if desired. Enjoy!

Lime Cookies

Ingredients

  • 4 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 2 tbsp lime zest
  • 1 egg
  • 2 tbsp lime juice
  • 1 box white cake mix
  • 1 3/4 cups powdered sugar
  • 3-4 tbsp lime juice

Directions

  1. Preheat your oven to 350 degrees.
  2. In a large bowl beat the cream cheese, butter and lime zest until well blended.
  3. Add the egg, 2 tbsp lime juice and cake mix and mix until smooth.
  4. Use a spoon to place dollops of dough on ungreased cookie sheets and bake 12-14 minutes, or until the edges of the cookies are slightly browned.
  5. In a bowl mix together the powdered sugar and 3-4 tbsp lime juice. When cookies have cooled dip the top of each cookie in the glaze and place on a cooling rack. Let the glaze set for about 30 min and store in an airtight container.
