What's better than an ice cream sandwich? How about a cookie dough ice cream sandwich? Take your favorite flavor of ice cream and layer it between two slices of edible funfetti cookie dough for the ultimate summer treat. We guarantee that this one will satisfy anyone's sweet tooth. Pull these out of the freezer on a hot pool day and you'll be a hero.
Funfetti Cookie Dough Ice Cream Sandwich

Ingredients
Cookie dough
- 1 cup butter
- 1/2 cup brown sugar
- 3/4 cup white sugar
- 1/2 tsp salt
- 2 tsp vanilla1 3/4 cups of flour (pre-cooked: 350 degrees for 10 mins)
- 3/4 cup rainbow sprinkles
- 3/4 cup mini chocolate chips
Filling
- vanilla ice cream OR ice cream flavor of your choice
Decoration
- 3/4 cup rainbow sprinkles
OR TRY
- melted chocolate
- chopped nuts
- crushed cookies
Instructions
Cream together butter, sugars, salt and vanilla until fluffy.

Blend in the flour and add the sprinkles and mini chocolate chips. Mix the ingredients together with your hands and form a ball.


Tip: If you find your cookie dough too dry you can add a tsp of milk at a time until it's the right consistency.
Using a rolling pin, roll the cookie dough ball out onto a flat surface until it's about a 1/4 of an inch thick (or slightly thinner). Use a biscuit cutter or top of a glass to cut an even number of circles.. Take a spatula and place these on a cookie sheet. Freeze for approximately 20 minutes.


If you want to speed the process up you can try edible cookie dough that's pre-made. It comes in a variety of flavors and it's as easy as rolling out straight out of the container.
Take a tub of vanilla ice cream and place a giant scoop on a flat surface. We like chilled stainless steel since it helps keep the ice cream cold. place a sheet of plastic over the ice cream and roll it out to your desired thickness.

This is your middle layer. You'll need to work quickly with the ice cream so that it doesn't melt. Using the same cutter that you used for the cookie dough, cut out sandwich centers and use the spatula to quickly place them between your frozen cookie dough slices.

You might need to scrape away the excess around the edges but no need to have them perfect. Pop these in the freezer and give them a good chill! At least an hour.
shake some rainbow sprinkles on a plate and roll the sandwiches through them to decorate the edges. Keep your cookie dough ice cream sandwiches frozen and take out to serve.

You can dress these up any way you like. Try chopped nuts, cookie crumbs or chocolate chips.
