Pie is in everyone's hearts as the one and true comfort food. I thought it would be nice to have that comfort on the go, so that's how these little pies came to fruition.
No pie shell? No problem, with the help of an ordinary ice tray you can throw these bite sized treats together in no time. No frills involved, just pie crust and pie filling! Leave the fancy stuff to the fancy people!
- Pie filling
- Ready made Pie Crust
- 1 egg wash
- Demerara sugar
- Preheat oven to 400 degrees.
- Place pie crust into an ice cube tray. Place a 1/2 tsp of pie filling into each well. Top with another piece of rolled out pastry.
- Using a rolling pin roll over the tray to seal the edges. Cut the excess pastry from around the edges and place in freezer for 1 hour. Flip over onto a cutting board and cut through the sealed edges to create individual cubes.
- Brush each with egg wash and sprinkle with Demerara sugar. Bake for 15 minutes or until golden brown.
