Lasagna Nachos, Two of My Favorite Foods Coming Together

Finding new ways to enjoy nachos is a lifelong quest and I have just discovered another delicious way. As long as you remember 2 things, you need crunchy chips and gooey cheese the rest is up to you!

Crispy lasagna nachos are exactly the type fusion cooking I'm into. Super simple to crisp up lasagna noodles and smother them in molten mozzarella and marinara! All the things you love about lasagna but you don't have to wait an hour to eat it!

Directions:

  • 1 pkg lasagna noodles
  • 1 cup seasoned bread crumbs
  • 1 jar marinara sauce
  • 1 tablespoon chili flakes
  • 2 tablespoons parsley, chopped
  • ½ + ¼ cup parmesan divided, grated

For Cheese Sauce:

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups milk
  • Salt
  • Freshly ground white pepper
  • 1 cup mozzarella, grated
  • 1/2 cup grated Parmigiano-Reggiano cheese

Directions:

  1. Cook lasagna noodles as per box instructions, drain and pat noodles dry with a kitchen cloth. Cut each strip into 4 equal sized squares.
  2. In a small dish mix bread crumbs and ¼ cup parmesan.
  3. Press lasagna squares into the mixture and cover both sides.
  4. Heat olive oil in a pan over medium high heat and place 3-4 lasagna "chips" in pan, cook until both sides are nice and browned. Dry each chip on a paper towel lined plated.

For Cheese Sauce:

  1. In a medium saucepan, over medium heat, melt the butter. Stir in the flour and cook for 2 minutes. Whisk in the milk, 1/2 cup at a time. Season with salt and pepper. Cook, stirring constantly for 4 to 6 minutes. Remove from the heat and whisk in the cheese.

For assembly:

  1. Place chips on serving plate, drizzle with heated tomato sauce and cheese sauce, sprinkle with parmesan, chili flakes and parsley.
  2. Enjoy!
