Yup! That's right...and that's exactly what we have for you here, the perfect summer treat for you and your friends to indulge in. No Bake Italian Cake is that light and fluffy treat that won't leave you feeling sluggish and overly full at the end of the evening - perfect for a weekend barbecue.

I made this cake last weekend for a family reunion barbecue we had, and it was a hit! The only modification I made was not sprinkling nuts over top (kids don't like them), but I bet either way it's delicious.

Added bonus...it takes no time at all to make this tasty treat!

1. Begin by layering the bottom of a 9 x 13 baking dish with vanilla wafers, then set aside.

2. Meanwhile, in a large bowl mix together the crushed pineapples, lemon juice, and condensed milk.

3. Pour the mixture over top of the of the vanilla wafers and spread out evenly, then add an additional layer of vanilla wafers.

4. Top the layers with a couple dollops of cool whip and spread out to cover the entire top.

5. Sprinkle with shredded coconut, pecans, and cherries.

6. Refrigerate overnight.

7. Slice and enjoy!

  • 1 cup of shredded coconut
  • 1 container of cool whip
  • 1 cup of cherries
  • 1/2 cup chopped pecans
