Easy style good ol' Southern corn is a favorite of mine, always has been and always will be! The creaminess of the cream cheese and cheddar mixed perfectly with the heat from the peppers is the perfect combination of flavors.  

My mom used to make this all the time as both an appetizer when we had guests or sometimes as a side dish with dinner. Its a quick and easy option with so much versatility! I have made it a few times as an appetizer and paired it with some nice little baguette pieces and my company was raving about it!

This is a dish that you can add or lower the heat. I personally like a good kick to my food, I don't even mind a little sweat on the brow, I will add more peppers to it. This also might be one of my husbands favorite dishes. We like to change up the heat and add extra cheese now and then.

Super easy to make, so full of flavor and easily so customizable to perfectly suit your taste buds. Try this corn out this weekend you wont regret it I promise you!

To make, Pre-heat oven to 350 degrees F. In a medium saucepan, combine butter and cream cheese. Stirring until creamy and smooth.

Add your corn, bell pepper, banana pepper, and pickled jalapenos.

Add paprika, salt, and pepper to taste.

Stir in 1/2 cup of cheddar cheese and stir until fully melted.

Top with remaining cheddar.

Ingredients

  • 3 + 1/2 cups corn
  • 1/2 large red bell pepper, diced
  • 2 bell peppers
  • 3-4 TBSP diced pickled jalapeno peppers, extra to taste
  • 2 + 1/2 TBSP butter
  • 4 oz cream cheese
  • 1/4 tsp paprika (regular, not smoked)
  • 1 cup freshly grated sharp cheddar cheese
  • salt and pepper, to taste
