Get Your Berry Fix With This Refreshing Summer Dessert

Summer is here and I refuse to turn on my oven! When the weather heats up I try my best to make recipes that don't need any baking - it's much too hot for that.

This Summer Berry Frozen Dessert is the perfect dessert to make when it's too hot to cook. There's no baking AND it only takes 15 minutes to make - how amazing is that?

Not only is this easy to whip up, but it's super delicious. Each bite is filled with bursts of berries, buttery graham cracker crumbs and cool cheesecake filling.

In a large bowl mix together the graham cracker crumbs, brown sugar and melted butter.

Press about 2/3 of the mixture into the bottom of a greased 9x9 dish and freeze.

Next, combine the cream cheese, sweetened condensed milk, lemon juice and vanilla extract.

Now add the raspberries, blueberries and strawberries and gently mix.

Pour mixture on top of your chilled crust.

Add the remaining crumb mixture on top.

Place in the freezer for at least 5-6 hours (overnight is best).

To serve, cut into squares and enjoy immediately!

Ingredients

For the crumb topping:

  • 3 cups graham cracker crumbs
  • 6 tablespoons light brown sugar
  • 3/4 cup unsalted butter (melted)

For the cheesecake filling:

  • 16 oz cream cheese (softened)
  • 1 can sweetened condensed milk
  • 1 tsp vanilla extract
  • 4 tbsp lemon juice
  • 2.5-3 cups fresh berries (make sure to dice strawberries if using)
