Sunshine Lemon Pie Brightens Up Any Day

There is honestly nothing more refreshing than lemon. Lemon baked desserts, lemon scented candles, even lemon cleaning products, the taste and smell is so refreshing. I love lemon desserts especially in the summer time. We do a ton of lemon infused water to stay hydrated and it gives a nice refreshing taste to it as well.

One of my most famous desserts is my sunshine tart. Using whole lemons, yes skin and all, blended to give that true lemon flavor. There is no artificial flavoring in this tart which is what makes it such a sought after choice when I have guests. I often times have people asking for it before they even come over.

With only a few ingredients and a blender, this Sunshine Tart takes literally minutes to whip together. Top it off with some fresh whipped cream and a little added lemon zest. Its the perfect pallet refresher after a nice summer BBQ'd meal.

You can make this as easy as it gets with a pre-made pie crust. Throwing it in the blender and right into the crust and in the oven. Taking all of 3 minutes to make before baking. It is a dessert i promise all of your guests will love and leave wanting more and asking for your 'secret' recipe.

To make, preheat oven to 350 degrees. Wash your lemons cut up and remove the seeds. Do not peel them as you will be using the whole lemon, skin included. Add the lemons, eggs, butter, vanilla and sugar to the blender.

Blend on high until fully liquefied.

Using a pre-made pie crust, pour mixture into crust  and bake for 40 minutes or until set.

Let chill in the fridge prior to serving. Meanwhile in a chilled bowl, combine 1 cup whipping cream and 2 tablespoons sugar.

Whip using an electric mixer until fluffy and peaks form. Place in the fridge until ready to serve.

Top your pie with fresh whipping cream and some lemon zest or a real fresh piece of lemon. ENJOY!

Ingredients

  • For the pie:
  • 1 large lemon
  • 4 large eggs
  • ½ cup butter, melted
  • 1 teaspoon vanilla
  • 1½ cups sugar
  • 1 (9 inch) piecrust, unbaked (I used a frozen deep dish)
  • For the topping: (optional)
  • 1 cup whipping cream
  • 2 Tablespoons sugar

Directions

  4. To make the whipped topping, whip 1 cup real whipping cream with 2 tablespoons of sugar. Place in the fridge until ready to serve.
  5. Top your pie with fresh whipping cream and some lemon zest or a real fresh piece of lemon. ENJOY!
