Teriyaki Chicken Pineapple Bowls are a Tropical Escape

There's something about eating food out of a fruit bowl that makes it seem like you're on a tropical vacation. These Teriyaki Chicken Pineapple Bowls are the perfect recipe to make when you're craving a tropical escape. And trust me, I'm in need of a vacation right about now!

The whole dish is served in a pineapple bowl which looks pretty darn impressive, (plus it means there are fewer dishes to clean!). The kids loved it too, it's not every day you get to eat out of a pineapple!

Once you hollow out the pineapple you can mix the fruit into the chicken mixture or you can save it to eat later - whatever floats your (pineapple) boat!

Yogurt and Spice Chicken

To start, take your whole pineapple and slice off a third of it. Remove the pineapple flesh from the inside to hollow it out. Save all that delicious pineapple for later, you're going to need it!

Add the oil, diced chicken thighs, soy sauce, brown sugar, and honey to a hot pan. Stir everything together to get all the ingredients combined and coating the chicken.

Remember all that pineapple you saved? Now's the time to use it! Dice it up into bite-sized pieces and add it to your chicken mixture in the pan. Give everything another good stir.

Once the chicken is fully cooked through and everything is coated in the sauce it's ready to serve. Add the chicken to your hollowed out pineapple with cooked rice, and garnish with sesame seeds, more pineapple chunks and chopped cilantro. If you don't like cilantro you can substitute with sliced green onions instead.

Now, doesn't this look good? Not to mention pretty impressive served up in a pineapple bowl.
