Carrot & Oat Cookies
Ingredients
- 1 carrot, peeled and chopped
- 3 dates, pitted
- 1 banana, mashed
- 1 cup oats
- ¼ cup almonds, chopped
- ½ tsp cinnamon
Directions
- Preheat your oven to 375 degrees and line a baking sheet with parchment paper.
- Place the carrots and dates in a food processor and pulse until chopped.
- Add the mashed banana, oats, almonds and cinnamon and pulse again until all the ingredients are mixed together and form a dough-like consistency.
- Place tablespoon sized balls on a baking sheet lined with parchment paper and press them down to flatten them slightly. Bake for 25-30 minutes.
- Remove from oven and enjoy!
3 Ingredient Coconut Cookies
Ingredients
- 1 banana, mashed
- â…” cup unsweetened shredded coconut
- ¼ tsp vanilla
Directions
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Add the mashed banana, coconut and vanilla in a bowl and mix well to combine.
- Place tablespoon amounts of the mixture on the baking sheet and press down slightly to flatten. Bake in the oven for 11 minutes and broil for 4 minutes.
- Remove from oven and serve while warm.
Banana Cookies

- 2 bananas
- 1 cup oats
- ½ tsp cinnamon
- ¼ cup chocolate chips
Directions
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Place all the ingredient in a bowl and mix well.
- Place tablespoon sized balls on the baking sheet and press down with a fork slightly.
- Bake for 12 minutes. Remove from oven and enjoy!
Peanut Butter Banana Oatmeal Cookies

- 2 cups oats
- 2 bananas
- ¼ cup peanut butter
- 1 tsp cinnamon
- ¼ cup chocolate chips
Directions
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Place all the ingredients in a food processor and pulse until a dough-like consistency is formed.
- Place tablespoon sized balls of the mixture on the baking sheet and press down with a fork to flatten them slightly.
