Carrot & Oat Cookies

Ingredients

  • 1 carrot, peeled and chopped
  • 3 dates, pitted
  • 1 banana, mashed
  • 1 cup oats
  • ¼ cup almonds, chopped
  • ½ tsp cinnamon

Directions

  1. Preheat your oven to 375 degrees and line a baking sheet with parchment paper.
  2. Place the carrots and dates in a food processor and pulse until chopped.
  3. Add the mashed banana, oats, almonds and cinnamon and pulse again until all the ingredients are mixed together and form a dough-like consistency.
  4. Place tablespoon sized balls on a baking sheet lined with parchment paper and press them down to flatten them slightly. Bake for 25-30 minutes.
  5. Remove from oven and enjoy!

3 Ingredient Coconut Cookies

  • 1 banana, mashed
  • ⅔ cup unsweetened shredded coconut
  • ¼ tsp vanilla

Directions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. Add the mashed banana, coconut and vanilla in a bowl and mix well to combine.
  3. Place tablespoon amounts of the mixture on the baking sheet and press down slightly to flatten. Bake in the oven for 11 minutes and broil for 4 minutes.
  4. Remove from oven and serve while warm.

Banana Cookies

  • 2 bananas
  • 1 cup oats
  • ½ tsp cinnamon
  • ¼ cup chocolate chips

Directions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. Place all the ingredient in a bowl and mix well.
  3. Place tablespoon sized balls on the baking sheet and press down with a fork slightly.
  4. Bake for 12 minutes. Remove from oven and enjoy!

Peanut Butter Banana Oatmeal Cookies

  • ¼ cup peanut butter
  • 1 tsp cinnamon
  • ¼ cup chocolate chips

Directions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. Place all the ingredients in a food processor and pulse until a dough-like consistency is formed.
  3. Place tablespoon sized balls of the mixture on the baking sheet and press down with a fork to flatten them slightly.
  4. Bake in the oven for 15 minutes, remove, and enjoy!
