Ingredients:

For the egg rolls:

  • 1 pound ground beef
  • ½ medium yellow onion, diced
  • 1 tablespoon vegetable oil for cooking
  • Salt and freshly cracked black pepper
  • 5 slices American cheese
  • ½ cup pickles, diced
  • 14 egg roll wrappers
  • 1 egg white, whisked
  • Vegetable oil, for brushing egg rolls

For the sauce:

  • ¼ cup mayonnaise
  • 1 tablespoon tomato paste
  • 1 garlic clove, minced
  • 1 teaspoon paprika
  • Salt and freshly cracked black pepper

Directions:

  1. Preheat oven to 400 degrees. Prepare a baking sheet with parchment paper.
  2. In a medium pan over medium heat, add a tablespoon of oil and onion, then saute until onion is translucent.
  3. Add in ground beef, breaking up any larger chunks, then season with salt and pepper, continuing to stir periodically until beef is browned. Drain off any grease, then add beef to a large bowl.
  4. Break up cheese into smaller chunks and add it to the bowl of browned beef. Mix together until the cheese is melted and has spread evenly, then stir in the pickles.
  5. To assemble the egg rolls, set an egg roll wrapper in front of you in a diamond shape. Add about 2 tablespoons of beef filling horizontally through the middle, leaving about an inch of space on either side. Using a pastry brush or your fingers, dip into the whisked egg white and and dab it along the edges of the wrapper. Fold two opposite corners towards the middle and roll it up (like a burrito). Once rolled, place the egg rolls on the parchment-lined baking sheet and brush with vegetable oil.
  6. Bake for 12-14 minutes. They should be golden brown when done. While the egg rolls bake, whisk all of the sauce ingredients until well-combined. Serve sauce with warm egg rolls. Enjoy!
