This S'mores Waffle Sandwich is (Almost) Too Good To Be True

This S'mores Waffle Sandwich is too good to be true - well, almost! You really can throw this together at home in no time with just a few ingredients. I mean, who needs a campfire when you've got a waffle iron?

With your usual suspects for ingredients, this is a delicious sandwich that you can eat on the go. All you need is whip up some waffle batter and add chocolate, graham cookie chunks and marshmallow and you'll be in heaven!

For the batter

  • 2 eggs
  • 2 cups all-purpose flour
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 tablespoon white sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

For the filling

  • 1 bag of marshmallows
  • 1 cup of graham cracker crumbs
  • 1 cup milk chocolate chips

To make the waffles, beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.

Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until just before golden brown. Stack them on waxed paper.

When ready to serve, heat the waffle iron and place half the waffle in the iron and the other half ready to fold over. Sprinkle marshmallows, ¼ graham cracker crumbs and ¼ cup milk chocolate chips across.

Press down the other half of the waffle and close the iron. Cook until chocolate starts to melt and marshmallow is oozing out.
