Tomato Pie Is a Spectacular Treat!

Here's a down right southern recipe...tomato pie! A little bit different from what you are probably more used to when it comes to pies, but trust me, it is just as delicious!

These pies can be made all year round, but personally, I suggest making them during the summer months when you're able to use fresh grown tomato's from your own garden.

Another great time to make this recipe is when your vegetable garden produced too many tomato's for you, this way nothing does to waste!

Much to my surprise, my kids absolutely love this pie...they call it the pizza pie though. Which I guess does make some sense considering it has similar ingredients in it that you would find in a traditional pizza recipe. Either way, if they enjoy it and it's in their good books, then it's a good recipe for me too!

1. Preheat your oven to 400 degrees.

2. Bake the empty pie crust in the oven for about 10 minutes.

3. Remove from oven and sprinkle a layer of cheese at the bottom of the crust, then a layer of onions, and finally a layer of chopped tomato's. Sprinkle with salt, pepper, oregano, and basil.

4. Continue to layer the pie in the order provided in step 3 until there are no more ingredients available, except a 1/2 cup of cheese.

5. In a small bowl, mix together the bacon, mayo, and 1/2 cup of cheese, then spread across the top of the pie.

6. Preheat the oven again to 350 degrees, and then bake the pie for 35-40 minutes.

7. Once the pie is baked, let it cool slightly before cutting.

8. Slice it up and enjoy!

Ingredients

  • 1 deep dish shell pie
  • 3 cups of chopped tomato's
  • 1/2 cup of chopped green onion
  • salt and pepper
  • 3 tablespoons of mayonnaise
  • shredded cheese of choice
  • 1 1/2 tablespoons dried oregano
  • 1 1/2 tablespoons dried basil
  • 5 pieces of cooked and crumbled bacon
