You've Never Had a Margarita Poke Cake like This One Before

Time to start the party with this delicious margarita poke cake! A light and fluffy dessert bursting with flavors of fresh lime and lemon, just be careful who you serve it to...it's got some booze to it!

Poke cakes are one of my favorite desserts to make, there's always so many different variations you can make and each one of them always turns out delicious! However I must say, this margarita one is probably one of my favorite ones to make during the summer season. I think it's a mixture of the fresh citrus flavors and the idea of a cool and refreshing slushie margarita that has me thinking that way.

It's also a great poke cake to make for a party because it's got a hint of a tequila in it and is sure to have your guests smiling ear to ear....just make sure your guests are over the age of 21 :)

1. In a greased 13x9 baking dish, bake the cake according to the directions on the box BUT add in lime zest from 1 lime, the juice from 1 lime, and 4 tablespoons of tequila.

2. Once the cake is baked, remove from the oven and allow it to cool slightly.

3. Take a wooden spoon and using the handle portion of it, begin to poke holes over the cake.

4. Next, in a medium sized bowl, whisk the pudding mix and milk together until it is thick and smooth. Stir in the juice of 1 lime, 1 tablespoon of tequila, and 1 tablespoon of Triple Sec.

5. Spread the pudding mixture over top of the holes on the cake, and use a spatula to spread it out and help to gently push the pudding into the holes.

6. Place the cake into the refrigerator to cool completely before icing.

7. While cake is cooling, in a small bowl add 1 tablespoon of tequila to the whipped topping and fold together until combined.

8. Spread over the cake mixture, and then top with lime zest and sprinkles. Enjoy!

  • 3 cups milk
  • 6 tablespoons of tequila
  • 1 tablespoon of Triple Sec
  • 1 tub of cool whip
