A Mojito Fruit Salad the Whole Family Will Love Just in Time for BBQ Season

One of my favorite things about summer is all the fresh fruits and herbs growing. Nothing smells better than fresh mint on a warm sunny day! I have to admit one of my favorite summer patio indulgences to cool off is a fresh lime mojito. There is just something about the mint and lime, ok the rum too, that just put me in a good mood.

In the spirit of my love for this refreshing cocktail, I decided to try mimic this refreshing flavor into other areas of food. Fruit salads are a staple in my house whenever I have company. I love to host frequent BBQ's and love to have a little variety on the table other than they typical burgers and hot dogs.

Although potato salad is a great side and well always goes over well with my guests, I love to add some fresh fruit to the mix.

My mojito fruit salad I have to say was one of the biggest raved about dishes last summer. It was different from most traditional salads and was definitely a nice change up. The way the fruit paired together with the fresh mint from my garden and the lime juice, was almost as good as that cocktail I have grown to love oh so much.

With crisp Granny Smith apples, green grapes, honeydew melon, kiwi and fresh mint and lime juice, this salad is a simple yet refreshingly flavorful. Packed with vitamins and minerals you can actually feel good about this sweet treat, a light little snack the whole family can enjoy!

To whip up this quick and easy salad, start by cutting up your kiwi and apple into bite size portions.

Cut the melon using a melon baller and cut all the grapes in half. Chop the fresh mint and prior to halving your limes, roll with your palm on a flat surface. This will help extract a lot more juice when it comes time to squeezing them.

Add all of the cut fresh fruit into a bowl.

Squeeze the juice of two limes onto your fresh fruit salad.

Add in your mint.

Gently fold all of the ingredients together to blend the juice and fresh mint.

Serve up right away and enjoy a refreshingly tasty, guilt free summer salad!

Ingredients

  • 2 Granny Smith Apples
  • 5 Kiwis
  • 1 Honeydew Melon
  • 1/2lb Green Grapes
  • 2 Limes
  • 3 Tbsp Chopped Fresh Mint

Directions

  1. Cut all fruit to bite size pieces, using a melon baller for the honeydew and saving the apples for last as they tend to brown easily.
  2. Add all the fruit to a large bowl and squeeze juice from both limes over the entire bowl.
  3. Add in freshly chopped mint and fold all ingredients together.
  4. Let the fruit mixture chill in the fridge for about an hour and serve to your guests on a nice sunny day!
