Beer and Honey Chicken Skewers Are Crowned My New Grill Favorite

Beer is a delicious, cool, refreshing drink, but did you know that it makes an amazing marinade for meat? Even if you're not a fan of drinking beer, you will love this Beer and Honey Chicken Skewers recipe served with a side salad drizzled in beer dressing, it's delish!

This meal is super easy to prepare ahead of time. Just throw the marinade ingredients into a ziptop bag or bowl, add the cubed chicken and let it sit overnight in the fridge. When you're ready to make the dish, simply pull the marinade and chicken mixture out of the fridge, thread the chicken pieces onto skewers and place on a hot grill or BBQ. Serve this with a side salad for a perfect hot weather meal.

Ingredients:

For the Chicken Skewers

  • 3 cloves garlic, minced
  • ¾ cup beer
  • â…“ cup honey
  • 1 tsp red pepper flakes
  • 1 tsp Dijon mustard
  • ¼ cup low sodium soy sauce
  • 1 tbsp olive oil
  • 4 chicken breasts, cut into small cubes

For the Side Salad

  • 6 tbsp olive oil, divided
  • 1/2 cup finely chopped shallots (or onions)
  • 1 clove garlic, minced
  • 3/4 cup beer
  • 3 T red wine vinegar
  • 1 T Dijon or whole grain mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Directions:

Cut chicken in small pieces, about 1½ inch cubes.

In a medium bowl whisk all the ingredients together.

Add chicken, there should be enough marinade to cover the chicken. Cover with plastic wrap and place in fridge. Let it marinate for at least 2 hours to 24 hours.

Fire up the grill.

Thread chicken on skewers, about 5 pieces per skewer. Do not throw away the leftover marinade.

Place chicken skewers on grill and turn every couple minutes or so, at the same time brushing some of the leftover marinade over the chicken. Grill until chicken is cooked through.

To make the salad, use 3 tbsp of the olive oil and cook shallots and garlic over medium-low heat until soft.

Whisk in beer, vinegar, mustard and honey.

Reduce to low and simmer for 4-5 minutes. Remove from heat, let cool. Add salt and pepper to taste.

Toss with salad and serve alongside chicken skewers.
