Ingredients:

  • 1 tablespoon vegetable oil
  • ¼ cup bacon, crumbled
  • ¼ cup onions, diced
  • 1 pound ground beef
  • Salt and black pepper, to taste
  • ¾ cup chicken stock
  • 1 ¼ cups ketchup
  • 1 bay leaf
  • ½ teaspoon smoked paprika
  • 1 ½ tablespoons brown sugar
  • ½ teaspoon cayenne pepper
  • 6 hot dogs
  • 6 hot dog buns

Directions:

  1. In a large pot over medium heat, heat up oil, then cook bacon until golden brown, about 6-8 minutes. Remove bacon from pot to drain on a paper towel-lined plate, then set aside.
  2. Add onions to the pot and saute until soft, about 5 minutes, then remove the onions to the same plate as the bacon.
  3. Drain pot of grease, then place back on the stove, adding the bacon and onions back to the pot. Add in the ground beef, cooking until browned, about 5-8 minutes. Season with salt and pepper to taste.
  4. Drain the pot of any grease, then add in the chicken stock, scraping up any stuck on brown bits from the bottom of the pot.
  5. Mix in the ketchup, bay leaf, paprika, sugar, and cayenne, until well-combined. Bring down the heat to low, and allow to simmer about 30 minutes, then season again with salt and pepper to taste.
  6. While sloppy joe mixture is simmering, grill hot dogs until browned and cooked all the way through, about 5 minutes. Put hot dogs in buns, and top generously with sloppy joe mixture. Enjoy!
