If you are looking for a new way to spice up your appetizer game, this Mexican Street Corn Salad is the perfect addition to any party. You can use it as a dip, with burritos, or just eat it as is.

Ingredients:

Dressing

  • 1/2 cup plain nonfat yogurt
  • 1 tablespoon lime juice
  • 1 tsp honey
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cumin

Salad

  • Splash of oil
  • 3 cups of corn
  • 1 clove garlic, minced
  • 2 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1 cup canned black beans drained and rinsed
  • 1 red bell pepper, seeded and chopped
  • 1/2 cup chopped red onion
  • 1/2 cup packed fresh cilantro, chopped
  • 1/2 cup cotilia or feta cheese, crumbled

Directions:

In a small bowl mix together the yogurt, lime juice, honey, paprika, and cumin with your Zwillings Whisk and set aside.

Heat oil in a saute pan then add the garlic and corn until it starts to cook up a bit. Add in the lime juice and salt.

In a large bowl add the corn mix with black beans, peppers, onions, cilantro and your cheese.

Drizzle the sauce over top and toss it together.

Serve as a topping for your tacos, burritos, nachos or just as a yummy salad!
