Not Your Average Nachos! Chicken and Waffle Nachos Take It To The Next Level

You know when someone makes something that might just be a little bit much? This dish is right on that line but in the best way possible.

These Chicken and Waffle Nachos are going to blow your mind! It has all of your favorite foods in one dish, with cheese drizzled on top. Doesn't get much better than that!

Ingredients:

Waffles:

  • 2 1/2 cups all-purpose flour
  • 2 tsps baking powder
  • 1 1/2 tsps kosher salt
  • 2 eggs
  • 1 egg yolk
  • 2 cups room temperature milk
  • 10 tbsp unsalted butter, melted

Cheese Sauce:

  • 1 1/2 cups cheddar cheese
  • 1/2 cup Parmesan cheese
  • 1 tbsp flour

Toppings:

  • 7 slices cooked bacon
  • 3 cups popcorn chicken
  • 2 tbsp Sriracha
  • 2 tbsp scallions

Directions:

Preheat oven to 150 degrees.

In a bowl, add your 2 eggs and 1 egg yolk and whisk with milk and melted butter.

In a separate bowl, combine your flour, baking powder and salt and mix it. Now add your liquid ingredients to your dry ingredients and fold them together.

Pour the batter into your waffle iron and remove it when fully cooked (time varies based on your waffle iron). Keep them warm in your oven on a wire rack while you mix up your cheese sauce.

In a medium size sauce pan melt your butter until bubbling and then add the milk, mixing them together.

Add in both types of cheese and stir until melted.

Now that you have your cheese sauce and waffles ready, it is time to gather the rest of your ingredients. You can use what ever type of popcorn chicken you like (store-bought or home made) and also which ever type of bacon you like the best. Take your waffles and put them into a dish. Pour a generous amount of cheese sauce over your waffles and then and sprinkle the popcorn chicken over top.

Then sprinkle pieces of bacon over the top.

Top with a little bit more cheese sauce and garnish with scallions. If you are looking for a little bit more of a kick, try topping with Sriracha sauce!
