Cucumber Roll Ups Are a Perfect Fresh Snack for Summer

Summer is almost here and that means it's time to say goodbye to all those heavy carb loaded pastas, and hello to fresh light veggies! With these delicious cucumber rolls ups being so easy to make, there's no reason they won't become a staple snack this summer.

Next time you're planning a day at the park, or a day by the pool, be sure to make a batch of these up for yourself and the kids to enjoy on the go. You really can't go wrong when you're filling their bellies and yours with nutritious, crunchy cucumber treats!

Feel free to get creative and change up the recipe to your taste of choice too! My daughter isn't a fan of ham, so instead I made hers with turkey and tzatziki - so tasty!

Each cucumber will probably get you about 8-10 roll ups, so be sure to keep that in mind when you're planning to make some for when you're out and about. Last thing you need is to run out of them in the middle of day causing a meltdown by hungry tummies.....we all know that can happen every now and then.

1. Slice the cucumbers using a mandoline or vegetable peeler roughly 2 mm in width. They must be able to be rolled without breaking. Place layers on a paper towel and allow moisture to escape.

2. Mix yogurt, curry and lime juice in a small bowl adding salt and pepper as desired.

3. Spread the yogurt mixture across the cucumber slices and sprinkle with fresh herbs if desired.

4. Spread thinly sliced ham or turkey across the cucumber slices.

5. Roll up carefully, using a toothpick to close.

6. Refrigerate until ready to serve.
