Looking for a quick pasta recipe? This One Pan Tortellini Primavera has it all! It's quick, easy, delicious and will become your new go-to meal for busy weeknights. We added squash, carrots, broccoli and zucchini to ours, but you can add any veggies you like! You can even add cooked chicken or shrimp for a some extra protein.
You'll want to make sure that you have a big enough pan to fit all the veggies and tortellini. We used a white ceramic Ballarini Treviso Saute Pan which has a lid that lets everything simmer together beautifully!
- 2 cups cheese filled tortellini
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 cup carrots, diced
- 1 broccoli head, cut into pieces
- 1 jar of pasta sauce
- 1 cup of water
- 2 tablespoons of Italian seasoning
- 1/2 cup of Parmesan cheese
Add all the ingredients to the pot, except for the Parmesan cheese.
Cover and cook over medium heat for 20 minutes, or until veggies and tortellini are soft.
Sprinkle Parmesan cheese over pasta and veggies. Serve warm and enjoy!
