Ingredients:

  • 4 lbs sweet potatoes, peeled and cut into 1 1/2 inch chunks
  • 4 slices thick-cut bacon, chopped
  • 13 - 20 sage leaves
  • 1/2 tbsp unsalted butter
  • 1/3 cup milk
  • 4 tbsp brown butter
  • 2 tbsp bourbon
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions:

Place the potatoes into a large bot with water and bring to a boil. Continue cooking until you can easily pierce them with a fork (about 20 to 30 minutes).

In a skillet, cook your chopped bacon until all the fat is out. Pull the bacon out of the grease, scooping about 1 tbsp of the fat out of the pan and set it aside.

Add your butter to the same skillet. Once melted, add the sage leaves into the skillet and cook about 1-2 minutes per side or until crispy, then pull them off the heat and set them aside.
