Guacamole is one of the best types of food to serve for a get together or just a regular snack, but you can up the ante by adding classic BLT ingredients to the mix and turning it into finger food.
With this BLT Guacamole, your classic guac gets some tomato and bacon in every bite, and you can even take things a step further by serving it on toasted baguette for a bruschetta-inspired meal you won't forget. - 2 teaspoons olive oil
- 3 slices bacon, thinly chopped
- 2 avocados, seeds removed
- 2 romaine lettuce leaves, halved, shredded
- 1 small red onion, finely chopped
- 2 tomatoes, finely chopped
- 1/4 cup lime juice
- 2 tablespoons fresh cilantro, chopped
- 8 slices baguette, toasted
Heat oil in a medium frying pan over high heat. Cook bacon, stirring occasionally, for 4 minutes or until golden and crisp. Drain on paper towel.
Roughly mash avocado in a medium bowl.
Reserve one-quarter of the lettuce, onion, tomato and bacon.
Stir lime juice, coriander and remaining lettuce, onion, tomato and bacon into the avocado. Season.
Top guacamole with reserved lettuce, onion, tomato and bacon. Serve with bread.
