Chipotle Citrus Chicken Skewers Are Perfect for BBQ Season

Summer is by far my favorite season. It's not just because the weather is nice, there is tons to do, but summer also brings another season where I live. BBQ season if you are wondering. With cold winters, there is nothing I love better than cooking my entire meal outside on the grill enjoying a nice sunny day!

I have done everything from appetizers, to mains to desserts. I put as much as I can on the grill. I also love to host a lot of dinners during the summer, giving me an excuse to try new recipes and yes, fire up that grill.

One chicken recipe I made last year, people went absolutely nuts over! I have since made it about 6 times already this year. I have it for dinner with my own family as its so easy to make and so full of flavor!

These chipotle lime skewers are so full of flavor, they have the right amount of kick paired perfectly with the zing of fresh lime. Thrown together in little to no time at all, they will win over any dinner party as both an app and as a main. Try them out this weekend, it must just become your new go to grill specialty.

To make, preheat the grill to high. Juice the orange into a large bowl.

Finely chop the garlic and add it to the large bowl with the orange juice.

Add the chipotle, and 1 teaspoon of salt and 1⁄2 teaspoon of pepper to the large bowl. Stir to combine. Slice the lime into 4 wedges. Set aside. In another large bowl, place the wooden skewers and cover completely with water. Allow the skewers to soak for 10 to 15 minutes.

Pat dry chicken thighs with paper towels. Inspect thighs for any remaining bones, cartilage or sinew and carefully remove with a knife. Dice into 1-inch cubes.  Place in the large bowl with the marinade. Toss to coat evenly and allow to marinate until ready to cook.

Thread the chicken onto the wooden skewers. Oil the grill grates to prevent sticking.

Place the skewers onto the grill, cook for 4 to 5 minutes on each side.

Serve one chipotle-citrus chicken skewer per plate.

Garnish with the lime wedges. Enjoy!
