4th of July Red, White and Blue Cheesecake Bars

Every year my house always hosts the big 4th of July festivities. We have everything from a big BBQ set up, to the bouncy castles for the kids to a big Tiki bar for the adults. We definitely like to go all out at our house.

I love to keep everything in theme. We do themed desserts, appetizers, cocktails and mains. Its safe to say I have a decent system by now. I guess you could even say I may tend to go a little overboard but hey, 4th of July is a big celebration down South so why not go all out!

The dessert table I would have to say is definitely my specialty. I have everything from popsicles to mini cookies, cupcakes and bars. All themed of course! The tri-colored cheesecake bars seem to be the consistent talk of the town.

With a super simple recipe, crushed Oreo and regular cream cheese, these bars a hit! Ready in under an hour with little to no mess and most ingredients you will already have at home. Serve up room temperature or chilled, whatever your preference they will not disappoint. Try them out for your 4th of July party this year!

Patriotic Oreo Pops

To make, preheat oven to 325 degrees. Line a 9x13 inch pan with parchment paper. Place your Oreo's with the filling into the food processor and blend into fine crumbs. Stir in butter and press firmly into the bottom of the lined pan. Bake for 10 minutes and set aside.

Beat the cream cheese and sugar until blended and smooth.

Add sour cream. vanilla and flour, continue to beat until well blended.

Add in the eggs and beat until mixed.

Divide the batter into 3 bowls, adding blue and red to 2 bowls. Mix to blend color.

Spoon the mixture over the cooled Oreo crust in an alternating pattern.

Using a spatula or knife, drag it up and down and across to create a swirl like pattern.

Bake for 45 minutes and allow to cool roughly for 1 hour and refrigerate for 4-6 hours.

Cut into squares or bars adding whip cream and sprinkles if desired.
